ADELE’S FAVORITE CINNAMON PANCAKES

December 1980

Ingredients:

PANCAKE MIX:
3 cups all purpose flour
3 tablespoons sugar
2 tablespoons baking powder
4 ½ teaspoons ground cinnamon
1 ¼ teaspoon salt

COMBINE all ingredients in a large bowl and set aside.

¾ cup milk
1 egg
2 tablespoons salad oil

IN A MEDIUM BOWL combine the above ingredients.

WITH A FORK BLEND IN 1 1/3 cups of the pancake mix until moistened but still lumpy.

COOK on lightly greased griddle or skillet. ADD butter and pure maple syrup as desired.

MAKES about ten 5" pancakes.


***The great thing about this recipe is that you can also give it as a gift…simply make the pancake mix and put it in a brown paper bag or a clear jar with a pretty ribbon. Include a label with directions on how to prepare the pancakes and a bottle of pure maple syrup…LA VOILA…you have just made someone very happy!
