BONUS

DEVONSHIRE CREAM
From Sherry Yard’s (Spago/Beverly Hills)
DESSERTS BY THE YARD

Ingredients:

½ cup mascarpone or cream cheese, at room temperature
2 teaspoons sugar
¼ teaspoon cream of tartar
1 teaspoon vanilla extract
½ cup heavy cream

MAKES 1 CUP

PLACE the mascarpone or cream cheese in the bowl of a stand mixer fitted with the paddle attachment, or use a large bowl and a hand mixer.

ADD the sugar, cream of tartar, and vanilla and blend well on low speed. Without stopping the machine, stream in the heavy cream.

WHEN WELL BLENDED, scrape into a bowl or ramekin, cover with plastic wrap, and refrigerate until ready to use. (The cream will keep, covered and refrigerated, for 2 days.)


***I made this cream in both versions and much preferred the one with the cream cheese. It most reminded me of the traditional English Devonshire cream but everyone’s different so see what you like best!
