MAPLE SCONES
Adapted from
SAMUEL SEWALL INN
Ingredients:
1 cup whole wheat flour
1 cup white flour
2 tablespoons packed brown sugar
2 teaspoons baking powder
¼ teaspoon salt
1 stick of butter
½ cup chopped toasted walnuts or pecans or praline bits*
1/3 cup maple syrup
¼ teaspoon maple extract or flavoring*
1 large egg
2 tablespoons milk or as needed
*I REALLY like the taste of maple and found that by adding the maple extract/flavoring the scone had an extra kick of rich flavor…same with the praline bits.
MAKES 8 scones.
HEAT OVEN to 400F degrees.
IN A LARGE BOWL, combine both flours, brown sugar, baking powder and salt. Using a pastry blender, or two knives scissor-fashion, cut butter into flour mixture until it resembles fine crumbs.
ADD nuts. STIR in maple syrup, maple extract and egg and just enough milk so that dough leaves side of bowl and forms a ball. Turn dough out onto a Silpat-lined baking sheet (or parchment covered one) and pat (with floured hands) into an 8 inch disk; cut into 8 wedges, but do not separate.
BAKE until golden brown, about 25 minutes. Immediately remove from baking sheet and carefully separate. Serve warm.
| ***I got very creative with this recipe one day and added bits of freshly cooked bacon…it was like having a full breakfast in one delicious scone…THEY WERE SO GOOD! Give it a try if you’re feeling adventurous. |
